Short-term Goals: Gain hands-on experience in a professional bakery environment, enhance technical pastry and cake decorating skills, and learn efficient kitchen operations.
Long-term Goals: Develop a deeper understanding of advanced baking techniques, establish industry connections, and build a foundation for a successful career as a professional cake decorator and baker

Experience

Last summer, I worked at Fairmont Chateau Lake Louise for four months, which provided an incredible environment to learn and further develop my professional skills. Over the course of the season, I rotated through different kitchen roles across various restaurants, where I plated desserts for service and actively participated in the production process.

This hands-on experience taught me the importance of maintaining high standards and gave me the chance to decorate desserts like yuzu cheesecake, pistachio cannoli, and chocolate cake with ganache. I was also responsible for the production of desserts for afternoon tea – a truly valuable experience.
